Apple Pie French Toast can be stored in the refrigerator for up to a week, just make sure to store the apples in a separate container. It can also be frozen for up to 4 months in an air tight container, but again, store the apples separately.

Apple Pie French Toast Recipe

Serves 5

French Toast Ingredients

Apple Pie Filling

  • 5 apples
  • 1 Tablespoon whole wheat flour
  • 1 Tablespoon brown Swerve
  • 1 teaspoon cinnamon
  • 1 Tablespoon softened butter

Topping

Directions

  1. Peel and core apples, chop into small pieces.
  2. Mix butter, brown sugar Swerve, and cinnamon together in a non-stick pot. Add apples, stir and cover.
  3. Cook on Medium-low heat until apples are soft, approximately 30 minutes, stirring occasionally.
  4. While apples cook, mix together protein powder, almond milk, eggs, brown swerve and cinnamon in a shallow dish.
  5. Dip each piece of bread into batter, coating both sides. Put aside.
  6. Spray non-stick pan with cooking spray and heat over medium-high heat.
  7. Cook bread slices, 1-2 at a time, flipping when brown.
  8. Assemble 2 slices of toast with 1/5th of apple mixture. If desired drizzle Enlightened caramel syrup or Walden Farms maple syrup, and top with whipped topping.
  9. Enjoy!
